After years of dreaming and planning, I finally had the funds to open my own bakery.

I had to go to the bank with my five-year business plan.

I needed to give them a complete list of the equipment I needed and a blueprint of the set-up of my bakery. I even had to give them the location I had chosen. The building was bare bones and there wasn’t even a refrigerator. I knew that refrigeration was going to be a necessity so that I could cool the cakes and confections quickly. I needed to be able to store them for short lengths of time before pickup. When I looked at the cost for purchasing a chiller unit and building a walk-in refrigerator, I was floored. I knew I couldn’t afford the cost to have a walk-in refrigerator built. I found a site within our local area that had rental services that included chillers and walk-in refrigerator units. The chiller could be used with 110 outlets. They also had walk-in chiller refrigerator units for mobile events. I was surprised at the wide section of walk-in chillers available. I thought that until I had my bakery established, this would be a viable solution to my refrigeration problem. I could rent the chiller/walk-in refrigerator on a monthly basis for the first year. At the end of that time, I could either choose to purchase a chiller/refrigeration unit, or continue with the rental on a lease/buyer option. The bank went along with the lease/buyer option and gave me the loan.
